Devising the menus at La Torre is a dynamic experience, following the bounty of each season’s harvest, so the Signature dishes do change
As seasons bring new menu highlights one dish regularly appears on the menu at La Torre, that is Il Piccione, pigeon presented in four ways. Applauded by many, Executive Chef Di Pirro has made this creation his own; serving a confit leg in estate olive oil, another sautéed tender and crisp, a supreme of pigeon and a pâté.
Another perennial favourite is Slow Poached Organic Crispy Hen’s Egg from Livorno served with creamed Parmesan cheese, asparagus sauce and cured pork.
In summer months the Blue Lobster with lime and tarragon is extraordinary.
